There’s something undeniably special about red velvet. Rich, vibrant, and just the right touch of indulgent, it’s a flavour that feels like a treat every time.
This recipe for red velvet cookies is soft and chewy, perfect for those moments when you’re craving something cozy and comforting. Whether it’s for a special occasion or just a little self-care moment, these cookies are a beautiful way to treat yourself (and your loved ones).
Ingredients for 3 large cookies:
160G CREAM CHEESE
300G PLAIN FLOUR
1 TBS BAKING POWDER
¼ TBS OF BICARBONATE of SODA
PINCH OF SALT
125G UNSALTED BUTTER
150G CASTER SUGAR
100G LIGHT BROWN SUGAR
1 LARGE EGG
1 TBS VANILLA EXTRACT
1 TBS RED FOOD COLOURING
300G WHITE CHOCOLATE CHIPS
INSTRUCTIONS:
Place the flour, cocoa powder, baking powder, bicarbonate of soda and salt in a bowl and mix to combine.
Beat the butter for 2 minutes on medium speed. Add the sugars and beat for a further 3-5 minutes. Ensure all of the butter is fully incorporated.
Add the egg, vanilla and red food colouring on low speed until just incorporated.
Add the dry ingredients and beat until fully incorporated.
On low speed, add the chocolate chips to combine.
Weigh each cookie dough ball to 130g. Then created a bird´s nest shape in each ball and place the cream cheese frosting inside.
Wrap de dough around the cream cheese until the dough completely covers it. Chill in the fridge for at least 3 hours before baking.
When ready to bake, preheat the oven to 180C. Place cookie dough and bake for 16-18 minutes until golden on top.
Allow to cool for 10-15 min and enjoy!
